The following list of ingredients is what you need for a Tapioca
Pizza Crust:
Dry Ingredients
-3/4 c. white or brown rice flour
-1 pkg. active dry yeast
-3/4 c. tapioca flour
-1 tsp. Agar-Agar powder
-1 tsp. salt
-1 tsp. sugar
-2 tbs. buttermilk powder
-2 tsp. xanthan gum
(Extra tapioca flour for rolling the pizza dough)
Wet Ingredients
-1/2 c. lukewarm water
-1 1/2 tsp. cider vinegar
-2 tsp. olive oil
To make gluten free pizza crust, mix all dry
ingredients well in a large bowl. Once mixed, add the wet ingredients. Stir
until all is forming a well-combined doughy mixture. Remove dough from bowl to
a tapioca-floured surface for kneading. Work with the dough until you have a
solid ball. Divide the dough in half. Work each half into a flattened pizza
crust and place on a pizza stone or parchment-lined baking sheet. (sprinkle
corn meal on parchment paper before putting crust on it.) Bake your crusts at
400 degrees for about 5-7 minutes to firm. Remove from oven, add your toppings
and pop back into the oven for about ten minutes. When the cheese is melted and
bubbling, your delicious gluten free pizza crust pizza is ready to eat.
