There is a lot of misinformation about eating healthy, particularly where gluten-free pizza crusts are involved. From the mid 20th Century to the 1980's, the guide to eating healthy was the Four Food Groups. These food groups were Meat, Dairy, Grains, and Fruits and Vegetables. The problem? Well, the people who did the research had a bit of a bias. They were made up of members of various cattleman's organizations, which explained why half of the four food groups involved either meat or dairy. During the 80's the big buzzword was fat-free. Then the Four Food Groups were replaced with the Food Pyramid. Now all of a sudden everyone was supposed to eat a lot of whole grains. These grains would help you to feel full so that you didn't eat as much. Well, there are two problems with eating a lot of grain.

The world has changed. Just a few years ago, the idea of gluten-free pizza crust was confined to major metropolitan areas and vegan enclaves.
