Why would anyone need gluten-free pizza crusts? Isn't 'gluten-free' just a diet buzzword? For some people, every year, there is some new diet fad. The diet industry is a three billion dollar a year industry. Remember diets such as Atkins, South Beach, Paleo, or The Zone? Those are just some of the diets out there. The industry slaps a label on something such as fat-free or gluten-free, and without any medical or nutritional reason to do so, people will run out and buy it. or some people, getting something that is 100% certified gluten-free isn't just about following some celebrity-endorsed fad diet. Sometimes, it can literally be a matter of life and death.
How bad can gluten-sensitivity be? It's not life-threatening is it? There are different levels of gluten-sensitivity, just as there are with any sort of food allergy or sensitivity. Someone with mild gluten-sensitivity would probably just get mildly sick. For someone who has celiac disease or some other form of acute sensitivity to gluten, the allergic reaction can put their life literally at risk.

There have been cases of patients admitted to the hospital that have gone into anaphylactic shock, an explanation of which is below from WebMD:

So as you see, sometimes, there is more than just a passing fad to be gluten-free. For some people it can literally save their life. That's why there is a real need for products such as gluten-free pizza crusts.
