Gluten-free foods such as gluten-free pizza crusts are more than just a dietary fad. For someone who has gluten-sensitivity, a versatile food such as gluten-free pizza crust is a blessing. While there are several forms of gluten-sensitivity, one of the worst ones is celiac disease, and For some reason, celiac disease cases are on the rise. One important thing that you can do to protect yourself or a family member that has celiac disease is to start buying gluten-free foods and enforcing a strict gluten-free diet.
Here is some information about the increase of celiac disease from MAYO.EDU:
"Celiac disease, an immune reaction to eating the protein gluten, is far more than an occasional tummy upset. Mayo Clinic research suggests the disease is becoming a major public health issue. Although the cause is unknown, celiac disease is four times more common now than 60 years ago, and affects about one in 100 people. According to Mayo studies, undiagnosed celiac disease can quadruple the risk of death. Mayo researchers are working to discover the causes and improve diagnosis. Their efforts have been aided by a 1950s streptococcus outbreak and a pizza delivery truck.

Sarah Berg suffered from severe gastrointestinal symptoms for six years. "I had gone to the doctor over and over again. I just didn't feel good most of the time." She had never heard of celiac disease until a colleague urged her to be tested at Mayo Clinic. Her diagnosis "was such a relief," she says.
The latest research at Mayo shows that Berg is far from alone. The prevalence of celiac disease appears to be rising dramatically. Joseph Murray, M.D., a Mayo gastroenterologist, says celiac disease is becoming a public health issue. Studies show four times the incidence compared to 1950, with fatal complications if it goes untreated.
"Celiac disease was rare, but it's now more common in all age groups," Dr. Murray says. Although the cause is unknown, celiac disease affects about one in 100 people. What's more, Mayo has found a fourfold higher death risk for people with undiagnosed gluten intolerance. [READ SOURCE]

What is Causing the Rise in Demand for Gluten-Free Foods

What is causing the rise in demand for gluten-free pizza crusts or other gluten-free foods?  For some reason, the number of cases of celiac disease that have been reported has gone up by over 40%.  Here is some valuable information from WedMD.COM:
"For people with celiac disease, a gluten-free diet is essential. But for others, "unless people are very careful, a gluten-free diet can lack vitamins, minerals, and fiber," says Green.
Celiac Disease Serious, Often Undetected
Experts estimate that about 1% of Americans have celiac disease. The condition, caused by an abnormal immune response to gluten, can damage the lining of the small intestine. That, in turn, can prevent important nutrients from being absorbed.
Symptoms of celiac disease include diarrhea, anemia, bone pain, and a severe skin rash called dermatitis herpetiformis. But celiac disease often has few or no symptoms. In part for that reason, only about 5% to 10% of cases are diagnosed in the U.S., Green says.
How can you know if you have celiac disease? The only way is to be tested. The first test is typically a blood test that detects antibodies related to an abnormal immune response. If the blood test is positive, a biopsy is performed to confirm inflammation in the lining of the small intestines.
But What If You Don't Have Celiac Disease?
Some people may be sensitive to gluten but don’t have outright celiac disease. These people may feel better on a diet with less gluten." READ SOURCE ARTICLE HERE
Researchers don't know why more and more people are being reported as being gluten-sensitive.  It could be something as simple as more people being health conscious and visiting their doctor more.  The key to managing gluten-sensitivity is all on the patient, however.

Gluten-Free Doesn't Have to Mean Boring

There are so many people these days that are being diagnosed with Celiac Disease which is basically an auto-immune disorder that affects the small intestine. The most common treatment for Celiac sufferers is a completely gluten-free diet.
Gluten is a specific type of protein that found in the starch of grains. Gluten is important in the creation of breads because it holds the carbon dioxide produced by the yeast.
So what does this mean exactly? Firstly; Gluten is a unique kind of protein that is naturally found in grainy starches; it is an important element in any bread-making process as the Gluten is able to “hold onto” the carbon dioxide that is produced by the addition of yeast in bread recipes. “Gluten-Free” means products or meals that do not contain any wheat; triticale; barely; oats and any gluten additives. Other products that may contain large amounts of gluten are your over-the-counter vitamins and prescription medications. Similarly gluten is often used as a thickening agent in foodstuffs and thus Celiac sufferers or those who wish to have a diet completely free of any gluten will have to take the time to inspect product labels.

Gluten-Free Foods: Truth in Advertising

Thankfully nowadays food labels are highly informative and anyone who is unsure can simply check the label of their favorite food for any gluten additives or ingredients. The good news is that several food companies have heeded the call for Gluten-Free products which are available in special sections of most stores; at major health stores and from specialized online stores. In fact, as the awareness of Celiac disease grows so does the gluten-free range of products one can choose from; with many new companies now even extending their gluten-free range to include a wide range of gluten-free products.
A few years ago trying to find anything free of gluten ingredients was nearly impossible and most Celiac sufferers where left to try and fend for themselves; most ended up getting their sustenance from a pure vegetarian diet.  But that isn't the case anymore.  Now you have more than a few options.  One option is gluten-free bread crumbs, another one of course is to go out and buy some of delicious gluten-free pizza crusts.

Beneftis of a Gluten-Free Diet

Some of the benefits of a gluten free diet include:
Better digestion
For those with celiac disease, it goes without saying that lacking proper digestion can cause a myriad of problems. By cutting down or completely eliminating gluten, you can say goodbye to the days of having a bloated stomach, abdominal cramping, constipation as well as diarrhea. When you start eating gluten-free foods you will start looking forward to meal times because you no longer have to worry about indigestion problems.
Higher energy levels
For people who are sensitive to gluten, chances are that the food you eat is not being properly digested by your body and therefore you do not get the maximum amount of energy form the foods that you eat. This can leave you feeling sluggish and lacking energy throughout the day. Once you start eating gluten-free foods, your body will be able to burn the food you eat and as a result you will have even more energy to do all the things that you love.
